A. Ingredients (3-4 pax)
- Paneer : 500 g
- Basmati Rice : 250 g
- Almonds (Blanched) : 10 pieces (pcs)
- Desi Ghee : 04-06 Tablespoons (tsp)
- Onion : 5 small onions (sliced)
- Biryani Masala powder : 01 tsp
- Garam Masala Powder : 1.5 tsp
- Red Chilli Powder : 01 tsp
- Curd : 1.5 cups
- Oil Refined/ Olive : 01 tsp
- Black Cardamom : ½ tsp powder
- Lemon Juice : 1-2 tsp
- Mint Leaves : 10-12 pcs
- Ginger : 04-05 slices (Julian cut)
- Garlic : 05-06 cloves
- Red Chilli : 03-04 pcs
- Cloves : 3-4 pcs
- Jaiphal : 1/4th tsp
- Cinnamon (Dal Chinni) – 02 stick pcs
- Green Cardamom (Chhoti Illayachi) – 03-04 pcs
- Indian Bay Leaf (Tej Pata) : 4-5 pcs
- Saffron : 01 pinch
- Milk : 01 cup
- Butter : 02-03 tsp
- Water : 03 Cups
- Salt : According to taste
B. Basic Preparation & Marination
- Step 1 - Wash & Soak the Rice for approx 20 minutes.
- Step 2 - Marinate Paneer : Marinate Paneer in thick Curd, Biryani Masala - Garam Masala , 1/4th tsp of Jaiphal masala, ½ tsp Lemon Juice, ½ tsp of Back Cardamom, 01 tsp Salt, 01 tsp Oil.
- Step 3 - Basic Preparation for Rice : While Marinating Paneer as above, boil the soaked Rice in a separate Pan with Salt (as per taste), 03-04 pcs Cloves, 01 leaf Tej patta, 01 tsp Lemon Juice, 02 small sticks Cinnamon, 03-04 pcs Cardamom - till Rice is little more than half cooked, as per your experience.
- Step 4 - Soak the Saffron (pinch) in 01 tsp of warm Milk & keep it to one side.
C. Method of Preparation
- Step 1 : Fry the Onion in a Pan in 01 tsp Oil until it turns Golden Brown. Reserve 1/3rd of these fried Onions & grind the balance portion to make an Onion paste.
- Step 2 : Fry Almonds (glanched) in Butter & then grind these Almonds with Ginger- Garlic - Red Chilli (as per quantity given above) and make a Paste.
- Step 3 : Put 04 tsp of Desi Ghee in a Pan (Kadahi), add Onion paste & ‘Ginger-Garlic-Red Chilli-Alomond’ paste in the Pan & fry till the Ghee separates from the paste gravy. Then add Marinated Paneer. NOW COOK IT FOR 08-10 MINUTES & Keep it to one side.
D. Layered Cooking of the Dish : Paneer Biryani
- Step 1 : Take a Handi (A Pan with thick layered bottom))
- Step 2 : Put half portion of Cooked Paneer (Step C-3 ), add layer of half cooked Rice preparation (Step B-3), sprinkle Fried Onions ( Step C-1), sprinkle the warm Milk droplets (Step B-4), add Desi Ghee droplets all over it.
- Step 3 : Repeat above layering sequence ( Step D-2) again, over the first layer. Now add 03-04 tsp of normal milk & cover the lid of Pan (Handi) & seal the lid with atta (thick flour paste) / aluminium foil.
- Step 4 : Cook above prepared layered material in same Pan (Handi) for approx 30 minutes on ‘very low flame’ or place Pan (Handi) on a Tawa & cook it on ‘low flame’ for approx 30 minutes or till such time preparation of Paneer Biryani tastes for having been fully cooked. Sprikle Mint leaves on steamy Paneer Biryani and relish.
