Delicious Jammu Rajma Masala: A Homemade Indian Recipe
Jammu Rajma Masala, a flavorful and hearty curry made with kidney beans, is a delicious Indian Dish favorite of all homes. This vegetarian dish is not only delicious but also rich in protein and essential nutrients. Ingredients:
1 cup kidney beans (rajma)
2 medium-sized onions - chopped
2 medium-sized tomatoes - puree
3-4 cloves of garlic - minced
1-inch piece of ginger - grated - make paste
2 green chilies - slit
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon red chili powder or as per your taste
1 teaspoon garam masala
2 tablespoon oil or ghee
Salt to taste
Chopped coriander leaves and slit Ginger for garnishing
Preparation:
Wash the beans (rajmah) thoroughly and soak them in enough water overnight. This will help in reducing cooking time.
Drain the soaked Rajmah (beans) and put these in a pressure cooker. Add enough water to cover the beans and cook for about 4-5 whistles or until they are soft and tender.
In another wok/ pan, heat oil or ghee over medium heat. Add cumin seeds and let them splutter.
Add finely chopped onions and sauté these until they turn golden brown.
Add minced garlic, grated ginger paste, and slit green chilies. Sauté until the raw aroma disappears.
Now, add the tomatoes puree and cook until the oil separates from the masala.
Add turmeric powder, red chili powder, and salt. Mix well and cook for another 2-3 minutes.
Once the Rajmah - kidney beans are cooked, add them to the pan along with the water they were cooked in. Mix everything well and let it simmer for 10-15 minutes.
Sprinkle garam masala and give it a final stir.
Garnish with freshly chopped coriander leaves and slit ginger.
Your homemade Jammu Rajma Masala is now ready to be served. It pairs perfectly with steamed rice, Jeera Rice, Mutter Rice or Parantha and roti (Indian bread).
